I got this recipe from Laura, the lady who owns the guest house we are renting! This stuff is good. And very easy, I made it in ten minutes on my lunch break! Plus it's full of protein from the quinoa and beans--and normally, I hate beans no matter what, but they are deeeelicious in this dish!
What you will need: Quinoa (I used the microwaveable frozen packs from trader joes! Super easy) Enchilada sauce (again, I used trader joes' cause I love TJs and there are no preservatives or artificial flavorings involved!) 1 can of black beans 1 can of corn (could also use fresh) Cherry tomatoes Cilantro Black olives Shredded cheese (optional) Plain Greek yogurt or sour cream (optional)
what to do: cook your quinoa (two servings) ahead of time. put it in a medium sized microwave safe bowl and add half the can of beans and half the can of corn. Stir in enchilada sauce--don't use too much, just enough to saturate the quinoa. Microwave for a minute. Add a layer of cheese (during the time of optimum meltability), fresh cilantro, tomatoes, olives, and Greek yogurt or sour cream.
You could do soo much with this! Put it in a tortilla, add avocado and jalapeños and chicken and crunched up tortilla chips!!!!!! The possibilities are endless!
